mmm... Rice Balls!

Cooking the most delicious rice balls is a tradition of mine for every holiday.
Here is the recipe:


-1 pound of Carolina Rice: Cook like you would boil macaroni.Do not cook according to box. Do not rinse rice, just drain.

- Put a stick of salted butter into pot where you cooked rice. Put rice back into pot and put on a very low flame.

- Beat 5 egg yokes. Pour egg on top of rice and stir.

- Add 2 cups of graded cheese to rice.

-Add shredded mozzarella if you like your rice balls cheesy. (I think the cheesier the better!)

- Beat up leftover egg whites.

- Make desired size balls out of rice.

- Have and bowl of flour and a bowl of breadcrumbs. (Italian seasoned of plain)

- Dip ball of rice in flour, then egg whites, then bread crumb.

After all of the rice balls are completed throw them right into the deep fryer!
